BROCCOLI CASSEROLE 
5 boxes frozen, chopped broccoli
1 lb. Velveeta cheese, slices
Ritz crackers
Butter

Cook broccoli as directed, except not quite as long. Drain well. Get all water out. Put half the broccoli in bottom of 9 x 13 inch pan; top with all the cheese slices, then remaining broccoli on top of cheese. Crush enough Ritz crackers to cover the top of the broccoli (I use 1 1/2 rolls of crackers). Melt enough butter to cover the crackers (approximately 1 1/2 sticks). Put in oven long enough to melt cheese and brown the crackers on top. Low oven (250 degrees) for 20-25 minutes.
