VIDALIA ONION RELISH | |
1 qt. finely chopped Vidalia onions, about 6 lg. onions 1 pt. finely chopped sweet red peppers, about 6 peppers 1 qt. vinegar 1 pt. finely chopped sweet green peppers, about 6 2 tbsp. salt 1 c. sugar Combine all ingredients, bring to a boil. Cook until slightly thickened, about 25 minutes, stirring occasionally. Pack hot in preheated jars, leaving 1/4 inch of head space. Fill and close jars. Process for 10 minutes. Cool and store. Makes about 5 pints. |
