EVERYDAY COFFEE CAKE 
1 1/2 c. sifted all-purpose flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1 egg
3/4 c. sugar
1/3 c. melted butter
1/2 c. milk
1 tsp. vanilla

TOPPING:

1/2 c. sugar
1/2 c. flour
1/4 c. soft butter
1 tsp. cinnamon
Powdered sugar

Combine first 3 ingredients. In separate bowl, beat egg until frosty. Beat in sugar (melted butter) until well combined. Add milk and vanilla. With a wooden spoon (a regular fork works also), beat in ingredients previously combined.

Pour into a greased 8 x 8 x 2-inch baking pan or 9 x 1 1/2-inch layer cake pan. Combine topping ingredients until crumbly.

Bake in preheated 375 degree oven for 25-30 minutes or until inserted cake tester comes out clean. 9 servings.
