SPAGHETTI SAUCE 
2 lbs. sausage
1 c. minced onion
2 cloves garlic, minced
2 (16 oz.) cans tomatoes, undrained and chopped
1 (6 oz.) can tomato paste
1/4 c. fresh parsley or 2 tbsp. dried parsley flakes
2 or 3 bay leaves
1 tsp. salt
1 1/2 tsp. ground oregano
1 tsp. brown sugar
1/4 tsp. thyme
1 c. water

Cook sausage, onion and garlic over medium heat until meat is browned; drain off drippings. Stir in next 9 ingredients. Simmer uncovered for 3 hours or until sauce is thickened, stirring occasionally. Remove bay leaves. Serve sauce over spaghetti. Sprinkle with cheese if desired. Recipe yields: 6 to 8 servings.
