CHRUSCIKI OR POLISH CHRUST
3 c. all-purpose flour
1/2 c. granulated sugar
6 egg yolks, beaten
1/2 buttermilk or cream
1 tsp. vanilla
1 tsp. mace
Cooking oil for deep frying
Vanilla sugar or powdered sugar

Sift flour and sugar in a big bowl; make a well and put beaten eggs in center. Add buttermilk, vanilla, and mace. Blend well but do not knead as it will harden. Chill for at least 30 minutes.

Divide dough into 2 parts. Roll out on floured board until very thin (about 1/8 inch) and cut in oblong sections 1 x 3 inches. Make a slit down the center of each section and turn one end of the strip in through the slit. Fry a few at a time in deep hot cooking oil until golden brown. Drain on paper towels and sprinkle powdered sugar or vanilla sugar. Store in covered container.

To make vanilla sugar: Place 4 vanilla beans in a pound of confectioners sugar. Keep covered in a canister for a few days until the flavor is absorbed by the sugar.
