EASY OVEN FRIED CHICKEN 
1/4 c. fat
1 1/2 to 3 lb. chicken, cut up
1 c. flour
2 tsp. salt
1/4 tsp. pepper
1/4 tsp. paprika
2 tbsp. parsley flakes

Preheat oven to 400 degrees.

Melt fat in shallow pan in oven. Meanwhile, wash and dry chicken. Place flour and seasonings in paper sack. Drop 2 to 3 pieces of chicken in at a time and shake until coated. Place chicken in the baking pan, skin side down.

Bake 30 minutes. Turn skin side up and bake for 30 more minutes. Serve hot with creamy pan gravy and potatoes. Makes 3 to 4 servings.
