ORIENTAL OVEN-FRIED CHICKEN 
1 broiler-fryer, 3 lbs., cut up
1 tsp. sugar
1 tsp. paprika
1/8 tsp. pepper
1 c. flour
1 c. peanut oil

Wipe chicken pieces as dry as possible. Sprinkle with salt, pepper and sugar. Let stand for a few minutes. Mix flour and paprika in bag. Shake chicken pieces in bag, one or two at a time. Brown quickly in skillet of hot peanut oil. Place in shallow pan in a preheated moderate 350 degree oven. Oven-fry 30 minutes to 40 minutes or until tender. Baste with sauce (recipe below) every 15 minutes.

SAUCE:

2 tbsp. butter
1/2 tsp. salt
1/4 tsp. prepared mustard
1/2 c. pineapple juice
1 tsp. soy sauce

Combine ingredients in small saucepan. Simmer 10 minutes. Garnish with pineapple sticks.
