VEAL CASSEROLE 
1 lb. veal stew meat
1 med. onion, chopped
2 tbsp. oil
4 tomatoes or 1 med. can crushed tomatoes
1 c. chicken broth
1 garlic clove, minced
1 bay leaf
Salt and pepper
1 lb. sliced mushrooms
1/2 c. red wine
1 red pepper or 1 jar roasted peppers

Saute onion in oil. Add veal and cook "slowly" for 1/2 hour. Be sure not to brown. Add all other ingredients and cook on low for another 1/2 hour. If using roasted peppers, add 5 minutes before finished cooking.
