PEACH BREAD | |
1 1/2 c. sliced peaches 3 tbsp. sugar 1 c. flour 1/2 tsp. baking powder 1/2 tsp. baking soda Dash of salt 1/2 tsp. ground cinnamon 3/4 c. sugar 1/4 c. shortening 1 egg 1/2 c. chopped pecans 1/2 tsp. vanilla Blend peaches and 3 tablespoons sugar in blender and process until pureed. Combine flour, baking powder, soda, salt and cinnamon and set aside. Combine 3/4 cup sugar and shortening, creaming well. Add eggs and mix well. Add peaches and dry ingredients, mixing until ingredients are moistened. Stir in nuts and vanilla. Spoon batter into one well greased and floured 9x5x3 loaf pan. Bake at 325 degrees for 40 to 50 minutes or until done. Cool 10 minutes in pan, turn out onto rack and let cool completely. |
