LEMON MERINGUE PIE 
1 c. sugar
1 1/4 c. water
1 tbsp. butter
1/4 c. cornstarch
3 tbsp. cold water
6 tbsp. lemon juice
3 egg yolks
2 tbsp. milk

MERINGUE:

3 egg whites
6 tbsp. sugar
1 tsp. lemon juice

Combine sugar, 1 1/4 cup water and butter. Blend cornstarch with 3 tablespoons water and add. Cook slowly until clear. Add lemon juice. Cook 2 minutes. Blend egg yolks with milk and add to cooked mixture. Bring to a boil. Remove from heat and cool slightly. Pour into baked pie shell.

Meringue: Beat whites until they form peaks. Add sugar slowly and whip after each addition. Add lemon. Whip well. Pour over pie mixture and bake at 350 degrees until meringue is golden brown, about 15 minutes.
