PIZZA PORK CHOPS WITH SCALLOPED
POTATOES
 
4 pork chops, trimmed of all fat

In a 9 inch square baking dish, grease, slice 1/4 inch thick 4 peeled medium potatoes, salt and pepper with each layer. Over this, pour white sauce (about 1 cup). Arrange pork chops over potatoes. Season with salt and pepper. Bake at 325 degrees about 1 1/4 hours until chops are brown. Turn chops to brown on other side. When browned, put one slice American cheese, one tomato slice and one green pepper ring on each chopped. Salt lightly. Return to oven and continue baking until cheese melts.

HINT: Finely chopped onion and/or American cheese in 1/4 inch cubes, layered between potatoes gives an added taste.

Total baking time: 1 1/2 hours, depending upon thickness of chops and potatoes.

WHITE SAUCE:

3 tbsp. butter
3 tbsp. flour
1 1/2 c. milk
Salt and pepper, to taste

Melt butter, blend in flour and cook for 1 minute, stirring constantly. Add milk gradually, cook until thickened, stirring constantly.
