DINNER QUICHE 
3 tbsp. vegetable oil
3 c. coarsely shredded raw potatoes

Press evenly into pie crust shape in 9-inch pie pan. Bake at 425 degrees for 15 minutes until just beginning to brown. Remove from oven.

1 c. grated cheese (Swiss or Cheddar)
3/4 c. cooked diced chicken, ham, bacon or sausage
1/4 c. chopped onion
1/4 c. chopped mushrooms (optional)

In a bowl, beat together:

1 c. milk
2 eggs
1/2 tsp. salt
1/8 tsp. pepper

Pour egg mixture over other ingredients. Bake at 425 degrees for 30 minutes until lightly browned and knife inserted 1 inch from edge comes out clean. Allow to cool 5-10 minutes before cutting.
