SARAH'S QUICK SHRIMP CREOLE 
1 tbsp. salad oil
1/2 c. bell pepper, chopped
1 (1 1/2 oz.) pkg. spaghetti sauce seasoning mix
1 (16 oz.) can tomatoes (do not drain)
1 lb. shrimp (shelled & deveined)
Hot cooked rice (optional)

In 2 quart saucepan cook bell pepper in oil until tender (about 5 minutes). Stir in spaghetti sauce seasoning mix, tomatoes (do not drain) and 1/2 cup water; cover and simmer 10 minutes. Add shrimp; cook until shrimp turn pink (about 3 minutes). Serve over rice.
