8 squash zucchini 2 green peppers 1 can tomato paste 2 tablespoons hot salsa salt and pepper to taste Dice green peppers and sauté with olive oil in large pot. Dice squash zucchini into cubes approximately 1 inch in size. Add to pot with tomato paste and salsa. Salt and pepper to taste. Let simmer 20 minutes, until flavor is absorbed by zucchini and has tenderized. Serve as a garnish for potatoes and meat.
