PUMPKIN BREAD | |
3 c. sugar 1 c. oil 2 tsp. vanilla flavoring 3 eggs 2 c. fresh pumpkin (cooked) or 1 lb. canned 3 c. flour 1 tsp. cinnamon 1 tsp. baking soda 1/2 tsp. salt 1/2 tsp. baking powder 1/2 tsp. allspice 1/2 tsp. nutmeg 1/4 tsp. cloves Preheat oven to 350°F. Mix sugar, oil, and vanilla. Add eggs and pumpkin. Stir in flour, cinnamon, baking soda, salt, baking powder, allspice, nutmeg and cloves. Pour mixture into ungreased pan. Bake 30 to 45 minutes until done. May be prepared ahead. May be frozen. Yields 2 loaves or 1 10 x 15 pan. |
