FRESH BROCCOLI CHOWDER | |
2 (10 3/4 oz.) cans chicken broth 1 bunch fresh broccoli, chopped (about 4 c.) 3 c. milk 1 c. light cream 2 c. shredded Swiss cheese 1 c. chopped cooked ham 1/4 c. butter 3/4 tsp. salt or to taste Pour chicken broth into a large saucepan. Add broccoli; bring to a boil, cover and cook for 10 to 15 minutes or until tender. Add milk, cream, Swiss cheese, ham, butter and salt. Cover and simmer for 15 minutes. Serve warm. Makes 2 1/2 quarts. |
