CHICKEN ST. GEORGE | |
2 lg. chicken breasts, boned and skinned 1/4 c. butter 1/4 tsp. salt Dash of pepper 4 thin slices boiled ham 4 thin slices Mozzarella cheese 2 tbsp. grated Parmesan cheese Cut each chicken breast in half. Place between 2 pieces of waxed paper. Pound with mallet or side of saucer to flatten. Place butter in an 8-inch square glass baking dish. Cook on high (maximum power) for 30 seconds or until melted. Add chicken breasts, turning to coat with butter. Cover and cook on high (maximum power) for 10 to 11 minutes or until chicken is tender. Sprinkle with salt and pepper. Top each piece of chicken with 1 slice of ham and 1 slice Mozzarella cheese. Sprinkle with Parmesan cheese. Cook on high (maximum power) for 2 to 3 minutes or until cheese melts. |
