PUMPKIN MUFFINS 
2 c. canned pumpkin
4 c. white flour
2 c. oatmeal
1/2 c. corn oil
2/3 c. white sugar
2/3 c. brown sugar
4 egg whites
1 tbsp. baking powder
1 tsp. baking soda
1 c. milk
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. ginger

Combine all ingredients and mix well. Bake in muffin tins for 20 minutes at 400 degrees.
