PUMPKIN MUFFINS 
6 tbsp. flour
2 eggs
2 tsp. baking powder
2 tsp. pumpkin pie spice
2 tsp. vanilla
2/3 c. dry milk
1 c. pumpkin
2 tsp. cinnamon
4 tsp. brown sugar

Mix all ingredients together and spoon into muffin cups. Bake at 350 degrees for 15 to 20 minutes. Exchange information: 6 muffins = 1 milk, 1 protein, 1 bread and 1 vegetable. Makes 1 dozen.

Optional: Add 1 fruit exchange; 1 mashed banana, 1 cup applesauce or 4 teaspoons raisins.
