SPINACH MADELINE 
2 pkgs. frozen chopped spinach or broccoli
4 tbsp. butter
2 tbsp. flour
2 tbsp. chopped onion
1/2 c. evaporated milk
1/2 c. vegetable liquid
1/2 tsp. black pepper
3/4 tsp. celery salt
3/4 tsp. garlic salt
Salt to taste
6 oz. roll jalapeno cheese
1 tsp. Worcestershire sauce
Red pepper to taste

Cook spinach according to package directions. Drain and reserve liquid. Melt butter in saucepan over low heat. Add flour until blended and smooth, but not brown. Add onion, cook until soft. Add liquid slowly, stirring to avoid lumps. Cook until smooth and thick. Add seasonings and cheese. Stir until melted. Combine with cooked spinach.

May be served immediately, or put into a casserole and topped with bread crumbs. Flavor is improved if latter procedure is followed and put into refrigerator overnight. Also freezes well. Serves 5 to 6. SO DIFFERENT!
