SPICY PEACH COBBLER 
8 lg. ripe peaches, peeled & sliced
2 tbsp. lemon juice
3/4 c. sugar
1/4 c. all-purpose flour
1 tsp. ground cinnamon
1 tsp. ground ginger
Pastry for double crust 9 inch pie

Toss sliced peaches and lemon juice. Combine sugar, flour, ginger and cinnamon. Add to peaches, mixing lightly. Pour into pie crust. Lay strips of pastry across top in lattice work fashion. Bake at 425 degrees for 10 minutes. Reduce heat to 325 degrees and bake 40 minutes more.
