ENGLISH MUFFIN 
This English tea bread is a yeast-risen unsweetened bread about 3 1/2 inches in diameter and about 1 inch thick. They are cut out, allowed to raise on a surface dusted with cornmeal, and then baked on a griddle. The muffins are then split and toasted and spread with butter or jam. The wandering "Muffin Man" was a familiar sight on the streets of all English towns during the Edwardian era.

NUT - SPICED ENGLISH MUFFINS:

4 English muffins
1/2 c. butter
1/2 c. packed light brown sugar
1/4 tsp. ground cinnamon
1/3 c. chopped nuts

Split muffins; toast lightly under broiler. Combine remaining ingredients. Spread on muffins. Broil until bubbly. Serve hot.
