SURPRISE CINNAMON COFFEECAKE 
3/4 c. sugar
1/4 c. soft shortening (Puritan oil)
2 egg whites
3/4 c. milk (skim)
1 1/2 c. flour
2 tsp. baking powder
1/2 tsp. salt

Blend together the first four ingredients. Then sift together flour, baking powder and salt and add to blended mixture.

STREUSEL TOPPING:

1/2 c. brown sugar
2 tsp. cinnamon
2 tbsp. soft butter
1/2 c. chopped nuts

Pour half of the batter mixture into a greased and floured pan; sprinkle on a layer of the topping. Add the remaining batter and then top with the rest of the streusel mixture. Bake in an 8x8 inch square or 8 inch round pan at 375 degrees for 20 minutes or until light golden brown.
