CHILE RELLENO SQUARES 
4 oz. can chopped green chiles, washed & drained
3/4 lb. Monterey Jack cheese, grated
4 lg. eggs, beaten

Grease an 8"x8" pan. Spread green chilies evenly over bottom of pan. Sprinkle grated cheese over the chiles. Pour eggs over cheese and bake 1 hour at 300 degrees until firm in center.

Cool and cut into 25 squares. Place squares on cookie sheet and flash freeze. When frozen, put in freezer bags and keep frozen until needed. Bake frozen squares for 15 minutes at 350 degrees before serving. (Frozen squares may also be microwaved.) When baked in a pie plate and served in wedges this dish makes an excellent breakfast or brunch entree.

Since microwave ovens vary in power, you may need to adjust your cooking time.
