PINEAPPLE POUND CAKE 
1 c. shortening
2 c. sugar
4 eggs
1 tsp. vanilla
1/2 tsp. pineapple extract
1/2 tsp. yellow food color
1 tsp. butter flavoring
3 c. flour
1/2 tsp. salt
1/2 tsp. baking powder
1 tsp. baking soda
2/3 c. buttermilk
1/3 c. crushed pineapple (drain & RESERVE juice)
1/2 c. chopped pecans

Preheat oven to 325 degrees. Mix all ingredients and pour into a tube pan. Bake 1 hour and 20 minutes.

ICING:

1 c. sugar
1/2 c. RESERVED pineapple juice
1/4 c. crushed pineapple
1/2 tsp. vanilla
1/2 tsp. butter flavoring
1/2 tsp. pineapple extract
