TORTELLINI SALAD 
1/4 c. olive oil
3 tbsp. lemon juice
1/2 tsp. salt
1/2 tsp. ground mustard
1/4 tsp. ground hot red pepper
1 clove garlic, crushed
16 to 18 oz. cheese tortellini
1 sm. red onion, cut in thin slivers
1 sm. sweet red pepper, cut in thin slivers
1 sm. sweet green pepper, cut in thin slivers
2 tbsp. chopped parsley

Combine first 6 ingredients in a jar and shake well. Cook tortellini following package directions. Drain. Rinse lightly with cold water. Drain again. In a large bowl combine all ingredients, stir gently to mix well. Cover and refrigerate until chilled.
