COUNTRY GRAVY 
4 tbsp. flour
4 tbsp. meat drippings
2 c. milk
Salt and pepper to taste

When finished frying meat, pour off remaining drippings in skillet. Add flour and drippings to make a smooth mixture. If too runny, add a little more flour, or if too thick, add a little more drippings. Add salt and pepper. Cook over medium heat until slightly brown. Add milk and cook until desired thickness, stirring constantly.

You need to stir briskly at first to keep from lumping. Or you may prefer to use your hand mixer.
