STUFFED BAKED POTATOES 
6 lg. baking potatoes
1/3 c. low-fat cottage cheese
Garlic to taste
4 green onions, minced
Paprika
2 tbsp. Parmesan cheese

Wash and dry potatoes. Prick the skin. Bake until done. Cut a slice from the top of each potato and scoop out the pulp. In a blender whip cottage cheese until creamy. Mash potato pulp and blend with cottage cheese until fluffy. Stir in onions. Spoon back into potato shell. Place on baking sheet. Sprinkle with Parmesan cheese and paprika. Bake until brown.
