STUFFED SOLE 
2 lb. sole fillets
1/4 lb. shrimp
Salt to taste
Fresh ground pepper
Paprika
1 1/2 tbsp. lemon juice
2 tbsp. chopped green onions
1/4 c. dry white wine
1 crushed clove garlic
2 tbsp. butter
Mushrooms
Cheese

Lay sole flat. Scatter shrimp over each fillet. Roll each fillet, securing with a toothpick. Place fillets in a greased baking pan (glass if you want to microwave). Season with salt and pepper. Sprinkle paprika over.

Stir together lemon juice, wine, onion, and garlic. Pour over fish. Sprinkle with gruyere or Parmesan cheese. Slice mushrooms and scatter over fish.

Cover and bake in a 350 degree oven for 25 minutes. When the sole is almost done, melt the butter in a pan. Stir in the flour. Transfer the sole to a serving plate, covering to keep warm. Slowly pour liquid from the baking dish into the flour mixture, cooking over medium heat, stirring constantly until thickened. Pour the sauce over the sole. Serves 4-5.

I usually microwave the fish in the serving dish, using a saucepan for the sauce. Check your microwave book for cooking time, mine says approximately 15 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
