BISQUICK BANANA MUFFINS 
2 c. Bisquick
1 egg
1 tsp. vanilla
3 tbsp. cooking oil
3 ripe bananas, mashed well
1/3 c. sugar
1/4 c. chopped walnuts (if desired)

Combine all ingredients. Spray muffin tin with Pam. Fill cups 2/3 full. Sprinkle with a little cinnamon and sugar mixture before baking, if desired.

Bake at 400°F for 15 to 20 minutes.

For a lower fat and lower sugar version, use reduced-fat Bisquick, 2 tablespoons oil and 1/4 cup sugar instead.
