CITY CHICKEN 
1 1/2 lbs. lean beef cubes
1 1/2 lbs. lean pork cubes
1 c. flour
1 onion, sliced
6" bamboo skewers
1 1/2 c. oil
Salt & pepper to taste
1 1/2 tsp. butter
2 c. milk
1 c. water

Skewer beef and pork cubes alternately. Dredge skewer through flour, salt and pepper mixture. Fry in oil until crisp.

Place skewers in roast pan. Saute onion in oil until tender, remove and put over meat. Drain all but 1 1/2 teaspoons of oil. Add butter, melt. Mix 3 teaspoons flour to oil or butter. Stir until smooth, slowly add milk and water, stirring constantly. Pour over meat and bake 300 degrees for 1 hour, covered.
