GAZPACHO 
1 (46 oz.) can V-8 juice
1/2 c. olive oil
4 tbsp. lemon juice
1 can beef broth
2 tbsp. wine vinegar
1/2 c. finely minced green onion
2 tomatoes, cubed
2 c. finely minced celery
1 green pepper, finely chopped
1 cucumber, finely chopped
1 med. yellow squash or zucchini, finely chopped
2 tsp. salt
1/2 tsp. ground pepper
Dash of Tabasco

Blend liquids well. Add all other ingredients and chill at least 3 hours. Swerve in cups or bowls, garnish with avocado slices. Keeps well in refrigerator.
