SWEET POTATO AND SCALLION
FRITTERS
 
3 eggs
3 sweet potatoes
6 scallions, julienned
3 tbsp. flour
1/8 tsp. cayenne pepper
1 tbsp. fresh ginger
1/2 tsp. nutmeg
Salt and pepper

Beat the eggs in a large mixing bowl. Peel and grate the potatoes. Add the potatoes, scallions, flour and spices to the eggs. Stir to mix.

The mixture can be formed into balls and deep fried or flattened and pan fried. Cook 3 to 4 minutes or until golden brown.
