MANICOTTI 
12 oz. manicotti, boiled and drained
12 oz. Mozzarella cheese, diced or grated
3/4 c. ricotta or cottage cheese
3 eggs, lightly beaten
6 tbsp. grated Parmesan cheese
2 c. manicotti sauce
1/2 tsp. salt
Pepper to taste

Preheat oven to 375 degrees. Boil manicotti for 5-6 minutes before stuffing. Combine Mozzarella, ricotta (or cottage cheese) and 2 tablespoons Parmesan cheese, eggs, butter, salt, and pepper. Stuff each manicotti with cheese mixture. Pour a thin layer of manicotti sauce in a shallow baking dish. Place stuffed manicottis on top of sauce. Spoon rest of sauce over manicottis and top with remaining Parmesan cheese. Bake at 375 degrees for 20 minutes.
