1 pkg. pie crust mix 1/2 lbs. sliced bacon 3 c. Swiss cheese, grated 7 eggs 1 1/4 tsp. salt 1/8 tsp. nutmeg 1/8 tsp. black pepper Dash cayenne pepper 3 c. light cream Prepare pie crust and place in 9 inch springform pan. Fry bacon until crisp. Drain and crumble. Sprinkle bacon over bottom of the pie shell, then sprinkle the cheese over the bacon. In a large bowl, beat eggs and spices with a wire whisk. Gradually blend in cream until well mixed but not frothy. Pour into pie shell. Bake at 350 degrees for 50 to 55 minutes or until the top is golden and the center is firm when pressed with fingertip. Cool for 15 minutes before removing the sides of the pan. Variations: Omit bacon. Sprinkle bottom of crust with Parmesan cheese after prebaking and add tender precooked broccoli. OR substitute sauteed sausage for bacon and lightly smear a good hot mustard on the bottom of pie shell before adding the remaining ingredients. |
