STEAMED SCALLOPS 
3 lb. scallops
1/4 c. lime juice
1/4 c. orange juice
1/4 c. grapefruit juice
1/2 c. white wine
3 shallots, chopped
4 cloves garlic, chopped
1 c. creme fraiche
1 tsp. cracked black pepper

Steam first 7 ingredients. Remove scallops with slotted spoon. Reduce liquid by half. Add creme and cracked pepper. Pour over scallops and serve.
