COTTAGE CHEESE BAKED POTATOES 
6 baked potatoes
1 c. cottage cheese
6 tbsp. butter
Chopped parsley

Bake potatoes until mealy. Split lengthwise, remove centers, whip lightly with butter and a little cream. Season with salt and pepper and add cottage cheese. Mix together lightly with a fork. Refill potato shells and sprinkle with finely chopped parsley. Serve at once.
