CUCUMBER SWEET PICKLE | |
Use fresh cucumbers, any amount. Cut tip ends off cucumbers, wash and soak in salt overnight. Drain salt water off next morning and pack in jars. You can use whole, chunk, or sliced cucumbers. BRINE: Takes about 2 cups liquid to fill 1 quart can. 1 c. vinegar 1 c. water 5 or 6 saccahrin tablets (whole grain, per qt.) Mixed pickling spices (1/4 tsp. per qt.) Make 6 to 8 quarts of brine at a time or for the amount needed at one time. Bring liquid to a boil and pour over cucumbers packed in jars. Seal. Put in hot water bath and bring to a boil. Turn heat off and remove jars from water. |
