DANISH CHRISTMAS CAKE | |
1 c. butter 1 3/4 c. sugar 3 eggs 3 c. all purpose flour 1 1/2 tsp. baking soda 1 tsp. salt 1 c. buttermilk 1 tbsp. orange juice 1 tbsp. orange rind 1 tsp. vanilla Sift flour, soda, and salt. Make smooth cake batter. Prepare in advance. 2 c. pecan nut meats 1 lg. bottle maraschino cherries Add to cake batter. Bake for 1 hour and 40 minutes at 300 degrees. Large flat pan. SAUCE FOR TOP: 1 grated orange rind 1 c. sugar 1 c. fresh orange juice 1 can coconut Mix together, let soak while cake bakes. Pour on cake immediately after removing from oven. |
