SUNBURST SALAD 
2 pkg. orange gelatin
1 (20 oz.) can crushed pineapple
1 (11 oz.) mandarin oranges
3 ribs celery, thinly sliced
3 med. carrots, grated
20-25 stuffed olives, sliced thin
2 tbsp. lemon juice
Orange juice

Dissolve gelatin in 2 cups boiling water. Drain fruit, reserving liquid. Add lemon juice and enough orange juice to reserved liquid to make 2 cups. Mix all, set in mold or bowl. Serve with mayonnaise, if desired.
