REUBEN PIE 
2/3 c. chopped corn beef
8 oz. drained sauerkraut
1 c. grated Swiss cheese
3 eggs
1 c. evaporated milk
1 1/2 tsp. Dijon mustard
9 inch pie shell

Prepare pastry for 9 inch pie pan. Line pie pan with pastry. Preheat oven to 375 degrees with cookie sheet on middle rack. Spread corned beef on bottom of pie shell. Top with sauerkraut and Swiss cheese. Beat eggs, evaporated milk and Dijon mustard; pour into pie shell. Bake on cookie sheet 30 minutes or until done.
