EULA'S STUFFED MIRITON 
3 Tbsps. butter
2/3 cup finely chopped onion
2 cups medium shrimp
2-3 drops liquid crab boil
3 slices bread, soaked in warm water and squeezed
6 medium miriton (vegetable pear or chayote)
1/4 cup green onion
1/4 cup parsley
Salt and pepper to taste
Italian bread crumbs for topping

Cut miriton in half and boil in water 25-30 minutes or until tender. Remove seed. Scoop out shell without breaking shell and set aside. Saute onions in butter until soft then add shrimp and seasonings. Add pulp from miriton along with bread squeezed and mix well. Cook another 10-12 minutes or until cooked through. Fill shells with stuffing and top with bread crumbs and bake 20 minutes at 350 degrees. Serves 6-8.
