EGGPLANT CASSEROLE 
1 med. eggplant
1 can tomatoes
1 can tomato sauce
1 med. onion
1 garlic clove
Parmesan cheese
Olive oil
Sugar
Salt and pepper
Eggs
Bread crumbs
1/2 green pepper or more to taste

Slice eggplant thin and dip in beaten eggs to which salt and pepper have been added. Lay in bread crumbs and fry medium brown in oil. Prepare sauce of tomatoes, tomato sauce, chopped onions, garlic, green pepper (all chopped small) and add sugar, salt and pepper to taste.

Place layer of eggplant, sauce, sprinkled with cheese until casserole is filled. Bake in a 375 degree oven for approximately 1/2 hour.
