MERRY BERRY HEAVEN 
1 box (4 serving size) gelatin, strawberry flavor (or sugar free)
3/4 c. boiling water
1 c. whole berry cranberry sauce
1 tbsp. grated orange rind
1/2 c. cranberry juice cocktail
2 c. thawed Cool Whip whipped topping
1 baked 9 inch pie shell, cooled

Dissolve gelatin in boiling water. Add cranberry sauce and rind; add juice. Chill until thickened. Fold in whipped topping. Chill again until mixture will mound. Pour into pie shell and chill until firm (about 3 hours). Garnish with cranberries and mint leaves, if desired.
