SPANISH RICE 
3 tbsp. butter
1 clove garlic
1 c. sliced onions
1 lb. ground beef
1 green pepper, sliced or diced
1 c. celery
3 1/2 c. tomato juice
2 tsp. salt
1/2 tsp. pepper
1 c. rice

Melt butter. Brown meat, onions, and garlic. Add peppers, tomatoes, and seasoning. Add rice. On top of stove, bring to boiling, then reduce heat and simmer for 30 minutes. May be in the oven at 375 degrees for 30 minutes.
