VEAL LOAF 
3/4 c. walnuts or pignoli
3/4 c. raisins
1 sm. can marinated mushrooms
3 lbs. ground veal
2 eggs
2 c. plain bread crumbs
1 c. sour cream
1 tsp. ground pepper
1 tsp. ground coriander
1 tsp. cilantro
1 tsp. basil
1 can cream of mushroom soup

Chop walnuts, raisins and mushrooms finely in food processor. Mix all ingredients together well. Bake in large loaf pan for 40 minutes at 375 degrees. Garnish meat loaf with fresh parsley and serve with rice. Serves 8.
