SPINACH BALLS 
1 (10 oz.) pkg. frozen spinach
1 c. seasoned stuffing mix
1/2 c. Parmesan cheese
3 eggs
6 tbsp. softened butter
Salt
Pepper

Cook spinach; drain well (force all water out by pressing with paper towel). Mix all other ingredients in with the spinach. Form into balls and put in cookie sheet. They can be cooked at this point for 10 minutes in a 350 degree oven or place cookie sheet in freezer until balls are frozen, then place frozen balls in container and keep in freezer until you need them. Then bake as above.
