FRUIT BREAD 
3 eggs
4 1/2 oz. sugar
1 packet vanillin sugar (from Japanese or Deli store)
1/2 bottle rum flavoring
Pinch of cinnamon
2 1/2 oz. chopped almonds
4 oz. chopped hazelnuts
4 1/2 oz. dried figs
4 1/2 oz. finely diced candied lemon peel
9 oz. raisins
4 1/2 oz. plain flour
2 oz. cornstarch powder
1 level tsp. baking powder

Whisk the eggs until frothy and gradually add the sugar and the vanillin sugar. Whisk for about 15 minutes until the mixture is thick and creamy. Add the flavoring and the spice, almonds and hazelnuts, the washed and chopped figs, the candied lemon peel, the washed and drained raisins; stir them all well together.

Add the flour mixed and sieved with the cornstarch and baking powder. Fill into a greased and lined loaf tin. Bake low in the oven. Oven: slow to moderate. Baking time: 70-90 minutes.
