FRENCH FRIED ONION RINGS 
2 lg. sweet Spanish onions
1 c. sifted all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1 egg, slightly beaten
1 c. milk
1 tbsp. vegetable oil
Vegetable oil for frying

Cut off root ends of onions; peel and slice crosswise into 1/4 inch slices. Separate slices into rings. Mix flour, baking powder, and salt together in a bowl. Add the egg, milk and the 1 tablespoon oil. Mix until smooth.

Pour oil into a skillet or deep fat fryer to a depth of 1 1/2 to 2 inches. Heat oil to 375 degrees on a deep-fat-frying thermometer. Dip onion rings in batter and place one at a time in oil; add only enough rings to cover surface of oil.

Cook rings until lightly browned on both sides. As rings brown, remove and drain on paper towels. Continue adding rings as there is room in skillet. Keep finished rings in a warm oven. Serves 4-6.
