PISTACHIO PUDDING CAKE -
WATERGATE CAKE
 
1 pkg. white cake mix
1 pkg. pistachio instant pudding
1 c. oil
1 c. club soda
1 c. chopped nuts
3 eggs, beaten
1 pkg. whipped topping
1 pkg. pistachio instant pudding
1 1/4 c. cold milk

Mix ingredients for cake well. Pour into well-greased and floured 9x13 pan. Bake 40 minutes at 350 degrees. Cool on cake rack. Mix up icing until thick. Spread over cooled cake. Cake keeps best when refrigerated. Serves 12-15.

This was the recipe I was looking for from years ago; I'm sure it is the same recipe from seeing the ingredients; I didn't see the instructions for making the icing but figured I just have to mix the last 3 items until mixed and fluffy; Watergate cake became popular when President Nixon had the Watergate Scandal - I always assumed that's where name came about.

The original recipe was as above except there was an additional layer....that being a can of pineapple pie filling spread over the icing. I believe the "Watergate" name was because there were layers of "cover-up" icing.....made popular during the Watergate Scandal during the Nixon Administration.

My sewing teacher in Baltimore gave me this recipe with one simple difference (and no pineapple). Use Cool Whip mixed with the pistachio pudding mix for the frosting. It's totally awesome!! I usually use walnuts, but when I'm feeling decadent, I buy a small bag of shelled pistachios. And at Christmas, I half maraschino cherries and make holly leaves using the squirt get to decorate. Everyone adores this cake.
